Thermocouple sensors generate a a small voltage when there is a change is temperature along the length of the sensor. This is caused by the two dissimilar metals that make up the thermocouple and the Seebeck effect those metals have when joined.
Thermocouples probes and sensors are ideal for use when high temperatures need to be measured as they can range up to 1300°C for the standard types and some can even reach 2300°C. Thermocouples also have a high level of sensitivity, especially when created with an exposed junction meaning they will react to any subtle changes much faster than most sensing solutions.
